Their Uni is processed fresh in Newport, Oregon without preservatives, stored in salt water to maintain freshness, and graded by quality and appearance. The ranching process involves collecting overpopulated purple urchins damaging kelp forests, then fattening them at the facility for high-quality Uni production. Purple Uni is noted for its natural sweetness and delicate texture, often rated higher in quality than red Uni. The Uni lasts about 6 days after processing and is best enjoyed fresh after rinsing with fresh water.
